Glazed tofu recipe baked in the oven

We eat tofu regularly, so some of us enjoy experimenting with this high-protein soybean cured. Last year, Benoit developed its perfect method of tofu baked in the oven, which we are happy to share here.

Ingredients

Tofu
1 tofu block (450 g)
Glaze marinade
2 tbsp miso paste
2 tbsp rice vinegar
2 tbsp tamari
1 tbsp sesame oil
2 tsp sweetener, we used brown rice malt syrup
1 garlic clove, crushed
chilli flakes, to taste

Method

To start, roughly cut the tofu block into cubes. Line a tray with baking paper and transfer the cubes to the tray.

Sprinkle some salt, and dry the tofu for 15 minutes in the oven, at approx. 100 degrees Celsius, until the tofu is lightly golden.

Meanwhile, prepare the glaze marinade in a small bowl. Whisk together all ingredients until you achieve a smooth consistency.

Once the tofu is dried, evenly lather all the marinade on the cubes and bake, at 160 degrees, until the tofu has browned, for approx. 30 minutes, turning cubes midway to bake evenly. Serve immediately.

This glazed tofu will keep up for 3 days in an airtight container in the fridge.

We’ve said it many times: Tofu is THE food staple of our house. We love this food—it is high in protein and calcium and a great source of amino acids, supporting optimal health for our body. Tofu is also a versatile food, easy to prepare and delicious.

We have a favourite way to prepare tofu in the pan, but some days, you want minimal work in the kitchen and play with taste and texture. And so baking is our answer. This glazed tofu recipe baked in the oven is hands off the most convenient method to prepare tofu, with no risk for the tofu to stick to the pan, as it can happen, and a minimal amount of dishes to clean. Most of the work is about waiting for the tofu to be ready so you can do something else in the meantime. It's a stress-free way to enjoy a delicious and healthy meal.

Can you bake tofu in the oven?

Yes, you can bake firm tofu in the oven. Our main tip is to first remove moisture from the tofu, sprinkle salt, and cook it at a low temperature. We like to infuse flavours into the tofu, so we always have a glaze marinade on the side. Once the tofu is ready, we pour the marinade heavenly and bake again, at a higher temperature this time. Having sweetener in the marinade helps make the tofu crispier in the first place, but we can also leave an additional time. If you’d like to keep things more straightforward, one round of baking without marinade will suffice; only add some salt and olive oil.

This glazed tofu baked recipe is the perfect addition to any healthy meal, bringing the protein part to the plate. So what to eat this tofu with? Below are some ideas: Simply toss and sauté everything in a wok or a pan, plate, top with the baked tofu, and enjoy.

- Sautéed spinach with crushed ginger, garlic, a splash of soy sauce, and some cooked sushi rice.

- Caramelised onion with crushed garlic, dried parsley, a ton of olive oil and cooked spaghetti.

- Vegan burgers with buns, spread avocado and hummus, garnished with sliced tomatoes, pickles and salad.
